True Organic Food (TOFoo)

The Eurofins Competence Center for authenticity testing in France has developed an innovative solution for verifying the authenticity of the organic status of raw or minimally processed agricultural products.

Current applications

The TOFoo organic authenticity method is currently available for

  • UHT milk: verification of organic status using intrinsic product characteristics
  • Tomatoes: identification of characteristics linked to organic cultivation

Further work is underway to extend this approach to additional raw or minimally processed food products, with new results expected as the TOFoo research programme progresses. 

How TOFoo organic authenticity testing works

Unlike targeted analyses for pesticide residues, GMOs or antibiotics, this method captures the overall analytical fingerprint of a product and applies advanced artificial intelligence (AI) to process the data and classify it as either organic or conventional.

Because it does not focus on a specific substance or family of molecules, the method can reveal intrinsic characteristics associated with organic cultivation practices. This makes it a valuable complement to certification processes and supply chain traceability checks.

The Eurofins Competence Center for authenticity testing, Eurofins Analytics France SAS, has developed an innovative solution for verifying the authenticity of the organic status of raw or minimally processed agricultural products.

This development forms part of the TOFoo® (True Organic Food) collaborative research project, supported by Bpifrance under the France 2030 Programme. It builds on Eurofins’ long-standing expertise in authenticity science to provide a new, non-targeted approach to organic status verification.
